Many people don’t bother with a winter garden or don’t have the means to do so. They do want vegetables till late in fall and want to start up really early in spring. For those people, there’s a way to get more produce later in the year and earlier in spring.
There are quite a bit of fast-growing vegetables that will get you an early harvest or a late harvest. Most of these vegetables only take between 30 and 60 days. They can also be started in colder weather or keep growing in colder weather.
One of the good points of growing early in spring or late in fall is the absence of pests. Due to the cold weather, most bugs are already hibernating. And they are waiting for the sun to warm up the soil.

If you take the right radish, you will get a harvest in 30 days. These plants are really easy to grow. They grow extremely fast. And they are extremely tasty.
Radishes are a kind of sow and forget plant. Just sow the radish seeds in their final spot and make sure they get watered daily. You can use a layer of compost before sowing and the plants will grow out to maturity in 30 days to 45 days.
You won’t have to bother with diseases as radishes grow so fast, there’s almost no way diseases can develop. You’ll just have to watch out for pillbugs. Mulching the soil is really healthy but pillbugs love compost, woodchips and everything else being used as mulch. They do have the tendency to munch on the radishes. They won’t do much damage but the damaged radishes cannot be sold and are unsightly.
I’m one of the lucky people with a greenhouse. I can start my radishes in pots indoors. Once the plants are beyond their seedling stage, I can put them in the greenhouse. It just takes a bit of work to harden them off for a week. I put them in the greenhouse during the day and I take them back in at night. This way I can get radishes when there’s still frost in the air.

Turnips are the second one in the list of fast-growing vegetables to grow in spring and fall. And with good reason. Although it takes a bit longer to grow to maturity then radishes, it’s a really easy fast plant to grow early and/or late in the year.
The plants are quite hardy and are grown mostly the same way as radishes. They also aren’t really prone to disease due to their short lifespan.
Use a layer of compost before you sow the seeds of turnips. Make sure to sow them in their final spot because the roots don’t like to be handled.
And just like radishes, you can grow your turnips in pots. Make sure they have enough space to bulb up and you can place the container outside during the daytime and put them inside at night until they are hardened off.
Just make sure they don’t stand too hot indoors. This could lead to long spindly plants that don’t bulb up.

Everyone knows lettuce. it’s one of the real beginner plants that can be grown indoors, outdoors, in the soil or in a container.
Lettuce is a little bit more difficult concerning temperature and disease. But it’s still a really good plant as it grows to maturity in 45 to 60 days.
To make sure you can grow your lettuce really early in spring or late in fall, you have to check which lettuce you grow.
You can find lettuce for spring, summer, and winter. The one that is grown in spring can be grown in fall.
Make sure your lettuce doesn’t stand too wet. Although it loves moist soil, it can get root rot if the soil is soggy for too long.
Also, make sure the lettuce leaves can dry out during the daytime. The humid air can be dangerous as fungal growth may develop due to the moist in the air.

Kale is the perfect winter plant. it’s really frost hardy and it contains a lot of nutrition and vitamins.

The plant also grows quite fast and isn’t as prone to disease because of the cold temperatures.
You’ll be able to harvest leaves after about 55 days. Luckily for you, the harvest will go on for quite a while if you do it right.
Just take off the outer leaves and let the inner leaves grow up to a bigger size.
Make sure you don’t harvest the outer leaves too late as they can become tough and bitter after a while. They would still be valuable to feed the chickens at that point but you’d lose some of that tasty foliage.
Chinese pea pods or snow peas are a delicious food.
The peas don’t like the full sun during the day so they are a perfect crop to start really early or really late.
Start your snowpeas in temperatures above 7°C as they would not sprout otherwise.
Keep the plants in a reasonably dry soil. When the soil sticks to your fork, the soil is too wet and the peas will rot instead of sprout.
Like all peas, snow pea’s don’t really like to be transplanted. I avoid this problem by sowing the seeds in paper pots. I can just bury the paper pots in the soil, once the sprouts have emerged. The pots will decompose while the plant is sending out its roots.

Scallions or green onions are really easy to grow. And scallions are nothing more than standard onions that didn’t bulb up. That’s the reason why they can be grown so fast.
Just get a set of standard white, yellow or red onions. Plant the small bulbs out and let them grow to a decent size. You don’t have to wait until they’re fully grown.
As soon as you think, they’re big enough, just harvest them and eat them.
Scallions can be used raw or cooked. They have the real pungent flavor of onions and are a joy to cook with.

Everyone knows spinach as a wintergreen. And it really is.
Spinach can be grown really early in the spring and late into the fall. It doesn’t really need all that much attention and you can keep it alive for quite a while if you plan it right. Just like with kale, you can harvest the outer leaves and let the smaller leaves grow out to maturity.
The plant doesn’t mind cold temperatures and can even withstand quite a bit of frost. You can start spinach 6 to 8 weeks before the last frost in spring and the same period before the first frost in the fall.
There is one downside to spinach in warmer climates. It tends to bolt easily. So if you live in zone 9 or up, you really have to grow spinach through the winter. Mid-spring when the soil heats up, your spinach will go to flower.
Real baby carrots are immature carrots. There are different types of carrots that can be grown as baby carrots.
There are also carrots that are really small when they are fully grown. These are technically not baby carrots but they are small and grow faster than the normally grown carrots at full size.
Most shop-bought baby carrots aren’t baby carrots at all. In fact, they have fully grown carrots cut into smaller pieces.
Back to baby carrots. Look for a normal growing carrot that thickens quite fast and grow it for 6 weeks. After 6 weeks to 8 weeks, you can harvest the carrots and see if they are big enough.
Most carrots can be grown really late into fall or really early in spring. To start them out in spring, you just have to start them indoors. I personally grow my carrots in containers so I can put them outside or inside whenever I want.

I don’t know many people that don’t like beans.
Bush beans are one of the fast-growing crops to grow in spring and fall. Beans can be started indoors in spring and can be started outside in fall. Just like with peas, don’t start them in regular pots but sow them in paper pots.
The plants grow their first beans in about 60 days. The pods are harvested at an immature stage. That way, they are firm and crisp and don’t have any dry beans.

Eruca sativa or arugula is well known amongst chefs. The leaves are spicy and tasty. The arugula plant is a low growing salad green. it’s annual and does best in spring and fall.
If you start with moist, well-draining soil and sow directly in place, you will get leaves in a period of 30 to 45 days.
Over here, we can start arugula as soon as April.
As soon as day temperature is over 4°C or 40°F, you can start your arugula.
You can harvest your arugula just like spinach and kale. Just take out the outer leaves once they are grown big enough and let the younger leaves grow to maturity. You can keep on harvesting until the plant starts to bolt.
